Piper Heidsieck has appointed Émilien Boutillat as its new Chef de Cave.
The appointment followed Piper Heidsieck's recognition of Boutillat as one of the “most promising talents” in Champagne, with key attributes including technical expertise, achievements in the world of high-end Cuvées and a strong understanding of sustainable viticulture, it said.
In addition, Boutillat had international experience and knowledge of both the terroir of Champagne and the world of wines, added Piper Heidsieck.
“A fervent admirer of Régis Camus’ oenological approach, and in line with a prestigious series of Chef de Caves, he will be the guardian of the Piper-Heidsieck style and expertise,” said executive vice president Benoit Collard.
Boutillat worked as cellar master for Champagnes Cattier and Armand de Brignac from 2014 to 2018. He has also worked internationally in South Africa (La Motte Estate), Chile (Viu Manent), the US (Peter Michael Winery), New Zealand (Mud House Winery) and in France (Château Margaux).
