Pétrus re-opens in London

London restaurant, Pétrus, re-opens today as Gordon Ramsay brings the Michelin-starred restaurant back under his control.

Following the departure of former chef Marcus Wareing to start his own standalone restaurant,Pétrus, will now have head chef Sean Burbidge in charge, working closely with Mark Askew who has been an executive chef of Gordon Ramsay Holdings over the past decade.

Pétrus is now located at 1 Kinnerton Street in Knightsbridge and features an open wine cellar in the centre of the dining room which houses over 1,500 bottles of wine. The wine list itself has over 30 Pétrus vintages.

The new menu includes dishes such as roasted langoustine tails with watercress soup and confit potato, whole baked John Dory with mushrooms, lardons and Bordelaise sauce (for two people) and roasted beef fillet with braised shin, baked celeriac and Barolo sauce. Burbidge joined Gordon Ramsay Holdings in 2003 and has progressed from chef de partie to sous chef, and in March 2008 moved to Versailles to launch Gordon Ramsay at the Trianon Palace.

Jean-Philippe Susilovic returns as restaurant director. He has been director of the previous Pétrus for five years.

The restaurant will include a Chef's Table, overlooking the kitchen for six guests.
