Beer in a wine bottle

Published:  02 June, 2009

Ferran Adrià, the controversial famous Spanish chef from El Bulli, has once again stirred interest by creating a new hybrid beer to drink with food and which is served in a wineglass.

Adrià, who was party to starting the trend of foam on food, created the beer with his partner, Juli Soler and two of his sommeliers for the 100-year-old brewery Estrella Damm of Barcelona.

The drink, which is packaged in a wine bottle, is a mix of two beers and its name - Inedit - means 'original' in French.

Adrià said: "Inedit was developed from the belief that there was a need for a beer that could complement a dining experience."

The drink is a lager and a German-style Weissbier that is seasoned with orange peel, coriander and licorice. Because each ferments at a different rate, the beers are not blended until just before bottling in black 750-millilitre wine bottles.

"The marriage then undergoes a second fermentation in the bottle, like Champagne."

According to Adrià it has a floral aroma with hints of citrus and spice, and a flavour that is mild, fruity and balanced, like a young Chardonnay.

The beer is unfiltered, making it slightly cloudy. It has 4.5% alcohol.

The Michelin three-star restaurant in Roses, Spain El Bulli is considered one of the most controversial and experimental restaurant in the world.
