Le Manoir team scoop wine and dessert trophy

The assistant chef sommelier and the 1st Commis Pastry chef from Le Manoir aux Quat' Saisons in Oxford have scooped year's Wines of Roussillon Dessert Trophy.

The assistant chef sommelier and the 1st Commis Pastry chef from Le Manoir aux Quat' Saisons in Oxford have scooped year's Wines of Roussillon Dessert Trophy.

Thibaut Panas and Anne Coquelin beat off competition from three other finalist teams, including that of Gordon Ramsay at Maze, with their combination of a Domaine Gerard Gauby, Caricia, 2005 and a dessert of Manjari Chocolate 'Sable Breton' with Black Provencal Fig and Rivesaltes, at the final on Monday in London.

The competition final saw four pastry chef and sommelier teams battling it out to impress the judges in the final cook-off stage of the competition. The four finalist teams were the Compass Group - Restaurant Associates, Gordon Ramsay at Maze, Le Manoir aux Quat' Saisons and Tom Aikens.

Each team was asked to prepare and present their perfect pairing of an original chocolate dessert creation with a Roussillon Vin Doux Naturel from AOC Banyuls, Maury, Muscat de Rivesaltes or Rivesaltes.

Winner Panas said: "We are delighted to have won this competition. Anne and myself worked really hard on our dessert and wine matching combination and were grilled by our team at Le Manoir until presentation and delivery were perfect. We are looking forward to competing in Perpignan in February and will be proud to represent Britain".

As a prize, Panas will be invited on a four-day visit to producers of Roussillon's finest wines. Coquelin will attend a four-day course in Perpignan at the École Internationale de Patîsserie of world champion pastry chef, Olivier Bajard.

Both are also through to the competition's European final to be held in Perpignan on February 2 2009.

The competition is devised by the generic body for Wines of Roussillon (CIVR) and run in association with the Academy of Food and Wine (AFW).
