Novello market leader Cavit claims 2008 has been a classic year for Novello - traditionally the first wine of the vintage with a release date of 6th November, just one month after harvest.

Cavit's Head Oenologist and Winemaker Anselmo Martini explains, "Despite a difficult start to the year, the Teroldego grapes we use for our Novello wines experienced an ideal ripening season. Intermittent rain at the beginning of the year followed by a relatively cool summer resulted in this year's Novello having a very crisp, fresh bouquet and excellent acidity - really a classic year for Novello."

Cavit uses only indigenous Teroldego grapes from the Campo Rotaliano to make its Terrazze della Luna IGT Novello (RRP £6.00). Carbonic maceration of the whole uncrushed bunches ensures that the wine retains the original character of the grapes, and a short fermentation results in less sugar being converted into alcohol, giving Novello its characteristic fresh and fruity taste.

Cavit is a co-operative producer representing more than 4,500 growers and over 5,700 hectares of quality vineyards. Via its growers Cavit handles approximately 65% of the total wine production in Trentino, where it continues to bring an outward-looking dynamism to a traditional winemaking area.
