Edinburgh launches gin with flavours of the seaside

The plethora of premium gin launches has continued with Edinburgh Gin launching a product with botanicals sourced from the local coastline.

Seaside Gin is made with seaweed, scurvy grass and ground ivy and was created by four postgraduate students from Heriot-Watt University with head distiller David Wilkinson.

The company described it as having a "slightly sweet, yet minerally flavour of summer at the beach".

Alex Nicol, managing director of brand owner Spencerfield Spirit, said: "Seaside Gin is a product we have been working on with Heriot-Watt distilling school for quite some time.

"We wanted to create a unique gin using botanicals from the fantastic shores of Edinburgh and the surrounding area.

"We experimented with a lot of different seaside botanicals and we're really pleased with the result."

An initial 1,000 bottles of Seaside Gin have been distilled and it is being sold at the city's Heads & Tales gin bar and in the distillery shop, with an rrp of £35.

The distillery is located beneath the Rutland Hotel in Edinburgh's west end.
