Mr Lyan and Silo team up for new "drinks-led dining experience"

There will be no chance of food overshadowing the drinks list in Cub, a new venture between drinks maestro Ryan Chetiyawardana (aka Mr Lyan) and nose-to-tail Brighton restaurant Silo.

The food and drinks menu will be given equal billing at the new site, which is due to open in September above Chetiyawardana’s Hoxton basement bar, Super Lyan.

The venture marks Chetiyawardana’s first full foray into the world of dining and will replace his first bar, White Lyan, which launched in Hoxton, in 2013.

The restaurant will open in partnership with Doug McMaster, who is behind zero-waste restaurant, Silo.

Cub will be McMaster’s first venture in the capital.

The pair plan to “blur the boundaries of food and drink” with partnerships with Krug Champagne, Belvedere and LVMH in the works.

They will also be receiving input from Dr Arielle Johnson, a former resident scientist at Noma and MIT Media Lab fellow, who will assist in growing ingredients on site as part of planned research into the effects of the environment on food growth and flavour.

“We want to keep pushing boundaries (and keep things weird), but in a way that feels accessible and honest as well as exciting and modern,” Chetiyawardana said. “Cub will be the continuation of these conversations but taking them in a new direction – looking at how we can rejoin the worlds of food and drink, and showcase the importance of innovation and sustainability to a wider public”.
