New Scottish gin brand smells its way to success

A new Scottish gin brand is hoping to unlock gin-lovers taste buds by appealing to their sense of smell.

Persie Gin is the brainchild of Simon Fairclough, who toured the country and gathered the opinions of 3,000 gin-lovers in two years.

Gin distiller Fairclough explained: "I have travelled the length and breadth of the country with a carload of over 100 gins, so I've seen first-hand which gin styles score top marks every time. And they all have one thing in common: a perfect interplay of aroma and taste. This struck a chord with me, knowing that scientific research shows over 75% of flavour is down to your sense of smell."

Currently 70% of gin consumed in the UK is made in Scotland.

There are 19 gin distilleries, 36 gin brands and 82 different gin expressions - with numbers rising each year.

Persie Gin consists of three distinct styles of aromatic gin focusing on the profiles most popular at tastings.

The Zesty Citrus Gin (42% vol) is full of fresh limes and oranges; the Herby & Aromatic Gin (40% vol) contains rosemary, basil and bay leaves; and the Sweet & Nutty Old Tom Gin (43% vol) with vanilla pods and almonds.

Each gin is distilled with pure glen water from the local hills.

Fairclough, the man behind Gin Club Scotland, cut his teeth in the spirits industry as a consultant for Johnnie Walker, Cardhu, Talisker and Jura whisky brands.

He has branched out on his own for the Persie Gin venture, which is being produced from a distillery in the former Persie Hotel at the foot of Glenshee in Scotland.

"I have listened to what gin drinkers from the far north of Scotland to the south east of England have been telling me about the flavours, colours, scents and branding that appeal to them," he added.

"Not all styles of gin will appeal equally to everybody - but that's the wonder of taste and smell; it's all deeply personal and subjective."
