T.E.D signs up ethical wine suppliers for new sustainable restaurant

New London restaurant, T.E.D, which stands for Think.Eat.Drink, promises to offer "green gourmet" dining with its sustainable, ethically sourced menu complete with organic and biodynamic wine list.

The new restaurant concept comes from Jamie Grainger-Smith, who helped found Fifteen with Jamie Oliver and also set up Acorn House and The Waterhouse restaurants. It will look to use only ethically sourced British produce combined with an environmentally sourced drinks list.

It is looking, for example, to only work with drinks and wine suppliers that share its environmental ethos with its organic, biodynamic or carbon neutral lists. It has signed up Bibendum, Vinceremos, that only lists organic or biodynamic wines, and Xisto Wines, a specialist in Portuguese wine, that imports its wine by sail boat.

The restaurant uses only ethically sourced Britisih produce and furniture and fittings

The restaurant is set in the new Kings Cross redevelopment area and is situated over two floors using only sustainably sourced salvaged furniture, fixtures and fabrics from suppliers handpicked for their eco-sensitive practices.

Open seven days a week the menu is based around fully traceable British ingredients with dishes including Dorset crab and sour sough with fresh radish; Wye Valley asparagus, parmesan and egg yolk; followed by black bream gnocchi and tomato vinaigrette; ricotta gundi with roasted lettuce and a pea summer savoury and bavette of beef with Swiss chard gratin.  

The T.E.D Restaurant is the latest phase of Grainger-Smith's Think.Eat.Drink project to offer and promote sustainable practices across the on-trade.  This includes an accredited membership scheme for suppliers and operators who want to eat, drink and think more ethically, responsibly and profitably.
