Martin Morales of Peruvian restaurant Ceviche and Virgin Atlantic are joining forces to open the airline's first ever pop-up restaurant at Heathrow Airport in August.

Ceviche started life as a pop-up restaurant itself in London last year before finding a permanent location in Soho last March. The new restaurant for Virgin will only be available to Upper Class customers travelling through Virgin Atlantic's Clubhouse from August 12 to 18 and will be located in the exclusive Loft area of Virgin's award winning lounge.

The pop-up will serve Peruvian dishes including Don Ceviche, its acclaimed sea bass dish; Drunk Scallops (king scallops with pomegranate, Pisco and coriander oil); and Ensalada de Quinoa (quinoa cereal salad with Limo chilli, red onions and lime juice vinaigrette) at lunchtimes only.

Morales said: "At Ceviche we love doing things people have never done before. Innovation is key in what we do, and above all, it's fun to do new stuff. We love serving Peruvian food and cocktails, so we are excited by our collaboration with Virgin Atlantic.

"This is the first restaurant pop-up with Virgin Atlantic, and we think the combination of our food with their outstanding Clubhouse is perfect. It's only on for a week so it's a real one-off treat for us all."

Mark Murphy, Virgin Atlantic's Clubhouse food and beverage executive, said: "It's our aim to offer Upper Class customers  an ever-changing experience, and this will give them the chance to enjoy the tastes of Lima with the buzz of Soho before they fly."
